Held in the heart of Nantua, the festival celebrates the authentic pike quenelle with Nantua sauce during a friendly and festive day.

On the program:

  • Tastings of quenelles with Nantua sauce;
  • Demonstrations of culinary expertise by gastronomic brotherhoods;
  • Large market featuring local producers;
  • Parade of brotherhoods from across the Auvergne-Rhône-Alpes region;
  • Traditional meal under a tent or in Nantua's restaurants;

Nantua sauce, a specialty born here

It's impossible to talk about Nantua without mentioning its famous sauce.

Made with crayfish butter, the true Nantua sauce traditionally accompanies a pike quenelle made with fish from the region's lakes. This recipe is deeply rooted in local gastronomic history and has long contributed to the town's culinary reputation.

Participating in this festival also means discovering a whole gastronomic heritage passed down from generation to generation.

Note: As quenelles are a staple of Nantua's cuisine, this dish is available year-round at our restaurant L'Embarcadère.
